A Bay Area native, Chef Ryan Shelton has been using his roots in California to explore and interpret food from around the world. Chef Ryan’s first role as Executive Chef brought him to the vineyards of Santa Cruz to lead the team of Randall Grahm’s Le Cigar Volant, on the heels of two years as Chef de Cuisine of 2 Michelin starred Baume in Palo Alto. He also worked as a Pastry Chef at Chex TJ and the Ritz Carlton-Laguna Niguel. Having spent the last two years cooking in San Francisco, Chef Ryan Shelton will open his own restaurant within the year. This new endeavor, Merchant Roots, will spend its days operating as a craft grocer, showcasing handcrafted goods: small plates for dining in and pastas, charcuteries, and wine to take home. By night, the space will focus on the intimate 8-seat Chef’s Table which will feature themed tasting menus..
Chef Tu David Phu is a Vietnamese-American Chef, Food Editor and Forager. His stints include the nation’s top Michelin-rated restaurants: Chez Panisse, Quince, Acquerello, Daniel Boulud, Breslin, Gotham Bar & Grill and Gramercy Tavern. Most recently, Chef Tu was Executive Chef of Gather in Berkeley.
